If your friends are into sports, try something with the Real Madrid or FC Barcelona emblem on it. If you want to buy a gift for girls that are into jewelry, try damascene earrings (blackened steel inlaid with gold). If they are into card playing, try a spanish deck of cards - the suits are all different! What you buy might depend on what area of spain you will be visiting. But I would try to look for something that they can't get at home.

Forget Sherry. You can get it here and you can only bring one bottle back, and it's heavy. Leather goods is a good idea.
there are lots of souvenir shops around, u can get fans with Spanish pictures on them and some shops do deals where its cheaper if you buy more than one. they have cool t shirts bags anything really. you'll find its hard to choose but it wont be hard to find something.

Fanta Limon (lemon fanta) is amazing. You could get a fan, there are some that are very pretty. CD's of Spanish music (La Oreja de Van Gogh is a great band) are also good options.

when i went i brought most my female friends back authentic fans and for the guys i got some t-shirts.....be sure to take lots of pictures its sooo beautiful there I'm goin back for Christmas
