when you withdraw money from any atm machine, you will get euros. you can also walk in to most banks to exchange currency. before you go, ask your bank what fee (if any) they charge for atm withdrawals while overseas.
you can always change money at hotels, airports and exchange kiosks, but you will pay a commission.

I have been to Spain three times and always used ATM's to get local currency. Easy, they are everywhere, you get a good rate and you don't have to carry a lot of dollars with you.
