If you mean the typical Spanish food that you can't miss when you're visiting , i would say all kinds of tapas... tortilla, huevos rotos, patatas bravas, ... they are all delicious! |

Go for "Tapas" at any bar. Try many at once.
Do not miss a Paella, "Callos a la Madrileña", Manchegan Cheese, Rioja wine, Ribera del Duero wine, "Boquerones" (fried anchovies). |

There are some ideas on my website as some of the must trys as per the link below but if you want something that is pure Madrid:
Sopa Madrileño
This is a white bean soup with blood sausage and pork rind. Of course there are the Spanish classics:
Tortilla Español (Spanish potatoe omlette)
Jamon (dry cured pig hind leg)
Chorizo (Spanish sausage similar to Salami but not spicy and with larger pieces of meat / fat)
Morcilla (Rice and blood saugsage)
The one that you don´t want to miss though is TAPAS!!
Hundreds of different combinations are available in small portions and you can do as the Spanish do every Sunday morning (1100-1500) and eat tapas free with eat beer or another drink that takes your fancy.
Personal recomendation:
"Vinoteca" on the corner of plaza Santa Ana! A fine red wine such as Ribero del duero or Rioja and Jamon "Pata Negra" (black foot) |

Try all anguspm wrote. I went to a place called Museo del Jamon (in the center of Madrid) & had the best paellia (not the original with rabbit but with crubs, chicken, & safron)!!! Delicious! Only remembering how it tasted makes me hungry, but I am too far!!!
