Seafood. Valencia is a port city, so, lots of seafood.
Most of Spain, being so small, you can get pretty much any foods that you like, that are typical throughout the country...tortillas, typical throughout Spain, are really closer to a fritatta or an omelette than anything else an American would be familiar with. Certainly nothing like the flat bread tortillas that you think of, which are Mexican. But eggs, with different add ins...most typical being the fried potato and onion tortilla, which they call Tortilla Española, but you can get one with just about anything in it if you look hard enough.
They eat more organ meats in Spain than most Americans do. PatĂ© de HĂgado (liver) is available in a lot of places, and beans and rice (again NOT like you find in a Mexican place) are typical dishes.
Hams there are absolutely to die for! You HAVE to try Jamón Ibérico, if you ever go. It is incredible! (of course, not quite as good, but not terribly easy for an American to really tell the difference, and MUCH less expensive, is the Serrano, also more easily available). And the cheeses in Spain are really good, too, though most of the time the one most available is Manchego.
Olives are really popular throughout Spain, and there are more varieties than you ever thought possible.
But, of course, Paella Valenciana, the national dish of Spain, which was invented in Valencia...most typical there, and, as I said, you can get really great fresh seafood anywhere along the coasts in Spain...and, look at a map...lots of coastline. |

Paella Valenciana is the most common and most popular paella dish in all of Spain. This is, by far, the most "typical food in Valencia". That's not to say they don't eat other typical foods too like beef, pork, chicken, fish and shellfish, because they do. But the Paella Valenciana is the most famous food from Valencia.
