Well....Spain is a big place, but Ill give you SOME ideas
South of Spain-----The beaches are by itself BEAUTIES ...all surrounded by restaurants where you can eat "Tapas", little dishes so you can try a lot of gooooood Spanish food.
I had the best times of my life in Southern Spain. Nights are hallucinating, "Viva la fiesta!"
If you go to Madrid, then its simply IMPOSSIBLE to tell you. Its a all world of culture, fun and night life, actually the inhabitants of Madrid are called "GATOS", meaning CATS, because they life for THE NIGHT, "La movida Madrillena"
You MUST visit the "Reina dona Sofia museum", the "Prado" (Take some water and will to walk alot ), and the "Plaza Mayor" to have breakfast or simply have a coffee.......jeez! its not easy to name stuff to do in Madrid, because you have millions of interesting things to see and do.

Well, it's hard to pick only 3, but my favorites were:
the Palacio Real in Madrid, the beautiful plaza mayor in Salamanca, and the cathedral in Seville.
Followed closely by:
the Alcázar in Segovia, the aqueduct in Segovia, the cathedrals in Salamanca, the plaza mayor in Madrid, the Alhambra in Granada, and the town of Toledo.
I recommend you eat:
Tortilla española, patatas bravas, and drink sangria.
You should try jamón iberico de bellota... I hated it, but it's a huge deal in Spain, so give it a taste.

I just got back from a 15 day vacation to Spain.
I started in Barcelona and then went to Madrid, Toledo, Cordoba, Savilla, Ronda, Grenada, and then the Costa del Sol.
Out of everything, Savilla was my absolute favorite. It is just beautiful... my least favorite was Grenada... it kinda skeeved me out. I just had this like bad feeling about it and im from manhattan so things shouldnt make me feel like that.
Things to see.
1. the Gaudi Cathedral Segrada Familia - its SOOOOO awesome. even though it isnt finished yet (over 100 years in the making) it is off beat and a wonderful change up to the hundreds of gothic cathedrals planted all over.
2. The Alcazar Real - if I had enough money, i would totally buy this palace. It is one of the most beautiful things i have ever seen. I know money doesnt buy happiness, but if you could have lived there, I think the last thing you'd be is unhappy.
3. Cueva de la Pileta - it is this cave near ronda which is so historically fascinating. It has one of the world's largest amounts of well preserved neolithic cave drawings and you are allowed to get up close to see them. well worth the trip. only concern is that it is extremely slippery in the cave... wear sneakers.
also if you have time, try to see a flamenco show (not in madrid, they arent that good and are very expensive)
and of course try to see a bull fight. not because you want to see a bull get slaughtered, but to appreciate the art and cultural significance of the matador.
things to eat...
of course, paella and as much seafood as you like
and of course ham and cheese which you can find at any meal time.
the normal eating schedules is
breakfast at 7:30- 10
light lunch at 12- 2:30
SIESTA (watch out for museums as some places still close for siesta which was a surprise at first)
tapas at 6:30 - 7:30
and dinner starts at 9:30. most places dont even open for dinner before 9.
in my opinion, spanish food isnt too exciting since im used to eating very spicy things, however there are books that give you great places to dine at with different price ranges which i suggest you look at.

-terra mitca theme park near alicante, its nothing compared to english theme parks, they know how to do them well!
-eat fish fish fish

Three? that's all? In the whole country, right?
Hmmm that's tough, because there is SOOOOOOO MUCH!
I love Sevilla, so I would have to say the most important thing to do in all of Spain is to see the Cathedral in Sevilla, and climb the Giralda tower (which is part of it, so I'll count that as one) Then, of course, you have to see the rest of the city.
Madrid, as the capital, is a must...so...the Prado, and, of course, as long as you're there, you must see the rest of the city :)
and Granada. You can NOT go to Spain and not see the Alhambra. It is the most incredible Arab palace in Spain, and possibly anywhere. often used as film sets. REALLY a jewel!!! and, of course...there are a few other sights, as long as you are there.
Hmmm that's three, but I didn't have room for Barcelona...the whole city is an architect's dream to study! Sagrada Familia, there....and then there are all the smaller towns that you should try to explore, as well.
Sorry, I went over. I could write a book.
