Sorry, but the earlier answers/recipes make a real Swiss that I am go frenzy. Emmental in it - what a shame...! Cheese fondue is something very simple, I suggest to follow this receipe:

1 lb. shredded Swiss cheese (half Gruyère/half Vacherin)
3 tbsp. flour
4 clove fresh garlic
2 c. dry, not too fruity white wine
Pepper, nutmeg
3 tbsp. cherry brandy (Kirsch)
2 loaves Italian or French bread, cut in cubes, crust on each side

Rub fondue pot with garlic; pour in wine and cheese. Set over moderate heat stirring constantly with wooden fork or spoon until cheese is melted. Add pepper and nutmeg to your taste. Then mix flour with half a glass of wine, add, stirr again. Let simmer for just a moment, than add Kirsch. Serve and keep bubbling hot over burner. Spear bread cubes through soft side into crust; dunk and swirl in fondue. Serves 2 - 3.

What Guess Who said, but be sure to stir with your wooden spoon in a figure eight.

Hmmm, my mother-in-law doesn't use nutmeg. Sounds nice. She did however have a hard time finding Vacherin in Canada and deigned to substitute Emmental.

When you're almost done, you can break an egg into the pot and stir it in (with your bread) to the cheese. Makes a kind of omelet and gives you a head-start on clean-up. Seems to be more a lowland thing.

we here usually use the frozen cheese fondue that is available in stores and add a little bit more of garlic.
