The Langdale Chase on the shore of Lake Windermere, Cumbria, I've stayed there and it's beautiful.
It was voted the hotel with the best views in the country about three years ago and the food is stunning.

been to the lindeth howe hotel near windermere several times, nice staff, great views of the lake, lovely rooms, & amazing food. they have a mini gym, indoor pool & sauna. the house once belonged to beatrix potter & some of her early work is on display here. the hotel is far enough from the centre of the town of bowness for quite but close enough for any other requirements. they also do special romantic deals, we had our anniversary there one year so i prearranged flowers, chocs & wine in the room, when we went down at night for evening meal the chef had piped Happy Anniversary round the edge of my wife's dessert plate in chocolate. on our return to the room at night the maid had turned down our bed as usual, but also arranged two clean dry towels on the bed in the shape of a heart & sprinkled rose petals on to them. romantic i think????

How about the Lands End Hotel? It sits on the clifftop of Lands end and you get great views out across the sea. There're some great walks along the coast and you can go swimming if you want, it's reasonably priced too at about £50 a night at off peak times.
