It really depends on who you're going with!
If going with a partner i'd suggest the southbank, there's usually something going on there whether it's a festival or a concert but even when there's nothing going on it's a lovely and scenic walk down the river and there's nice bars and a few pubs you can stop off at.

Take the tube to Richmond, about twenty minutes from the Westminster area. Historic area: lots to see. The Thames runs through. Walk to the top of Richmond hill for the view or the park.
Pubs, cafes etc., good place to visit.

The Bitish Museum is free so is the British Library - check out on their websites. So is the Tate Gallery except for special exhibits. So is the Museum of London. Walk across the Millenium (wobbly bridge) from the South towards St Pauls (which can also be visited free). On Sunday morning go and look round the markets to the east of Liverpool St Station (theres others). Changing the guard at Buckingham Palace? Its often just nice to walk along the embankment on a nice day - theres entertainers etc.

In London?!? Hope for fair weather and watch the sun rise and set.

In a more serious vein, though -- London is a great city in which to do walkabouts. It's been some years since I was there, but you also might want to inquire about day passes you can use on the busses and the Underground, to cover more of the city at will.
