Depends on what island.
Oahu: Nightlife, Waikiki, Shopping, Diamond Head, Polynesian Cultural Center, Pearl Harbor, Hanauma Bay, Parasailing, Jetskiing, Wind-surfing, Surfing, Canoeing (outrigger and ocean going), Kayaking, Snorkeling, Diving, Beach, Fishing, Deep Sea Fishing, Dinner Cruises, Luau (I like the Paradise Cove Luau), Rainforests, Dole Pineapple Plantation - just too numerous to mention.
Kauai: Must visit the 'Grand Canyon of the Pacific' and try zip-lining throught the rainforest.
Big Island - all the same outdoors stuff plus volcanoes, black sand beaches - not so much in the way of nightlife.
Maui - a blend - touristy stuff, great beaches, phenominal aquarium - great luau - all the regular outdoors stuff

You can island hop - check rates for Aloha and Hawaiian Airlines - they are in a price war right now and I just saw one way rates for $9.

Aloha and have fun

here's a really cool unique thing I am giving my best friend and her fiancee for her honeymoon - it's a 'behind-the-scenes' restaurant tour, where these celebrity chefs/food critics take you on a tour of the best little "hole-in-the-walls" in Oahu. And the guides will also give you some history on Hawaii, give you suggestions of local things to do, etc. It got fantastic reviews, and looks like something really neat to do. However, I'm not sure how old the people in your family are - it would probably be a better thing to do if the kids were a little older. Have Fun!!!

First thing - use public transit to travel around Oahu; No need to rent a car or use a tour company. Honolulu has one of the best public transit systems in North America - remember to take a transfer - it is usually good for the whole day. Maps are available on their web site or once you arrive on the island at the front of the bus right behind the driver.
Things to check out - Turtle Bay Resort and Beach - the public has access to the beautiful beach via the beachfront restaurant. You can experience the sights and sounds as the waves crash onto the reefs; Also, great swimming area in the cove. The bus will drop you off in the parking lot and walk to the right of the hotel and you will come to the beach area.
On your way back, stop by the Dole Pineapple Plantation and experience how they grow pineapples on the island and the history behind them. They have a great snach bar and gift shop here.
Next, check out Hanuhana Bay for a day and swim with the fish - plan to get there early since it gets quite busy. You will need to view a short movie on the history of the Bay and how the fish and reefs are protected and how you are to conduct yourselfs while swimming there - remember to rent a mask and snorkel to truly enjoy this sanctuary.
Waikiki Beach / Kulio Beach is next to see and enjoy the sights and sounds of Hawaii. You can arrange surfing lessons here or chill out and rent a lounge chair and umbrella.
Pearl Harbour is a must and again get there early - usually opens @ 07:30 a.m. and since it is free, the tour spots fill up quite early and you could have a long wait if you arrive later in the day. We decided to go on Wednesday morning early and tour Pearl Harbour and then walk over to the Stadium and check out the flea market.
Check out the International Market in Waikiki for gifts and t-shirts;
Since it is your first visit to Hawaii, a Luau is a must attend;
A visit to Hilo Hattie's, the Official Store of Hawaii is also recommended. They have their own free shuttles that travel the hotel areas of Waikiki and will take you there and back for free.
Also, a Don Ho Show would have been custom also - but Don has gone to the Big Show - Rest in Peace. If you are looking for entertainment, check out a husband and wife team of Greg and Winka MacDonald. They play steel drums usually once or twice a week outside the Duty Free Marketplace in Waikiki - always entertaining.

You definitely have to see the polynesian culltural center. It's kind of like epcots world showcase but it's devoted to all the islands of polynesia. They have seven different pavillions there and each one is devoted to a different polynesian island. And at the end of the day they have a big luau. You should also make sure to take one of the circle line tours. they take you to all kinds of interesting places including pearl harbor. It basically takes you on a complete circle around the whole island of oahu. And if you want to shop for souvenirs you need to go to the market place in Waikiki they sell all kinds of things very cheap. Also you should go to the aloha stadium flea market they have everything there and it's very cheap. And one more thing if you want to see the best luau on oahu you've got to see Paradise Cove. They take you by motorcoach from your hotel in Waikiki beach to the luau and when the luau is over with at around midnight they take you right back to your hotel. Your going to have a great time.

It depends what island you will go to. I really liked Kauai best and I took a helicopter ride there, you can see the famous waterfall from Jurassic Park and the coast line is just the most beautiful I have ever seen!

The Polynesian Culture center was interesting but allow all day because it is really big and even then you won't be able to see everything. I believe the best activity to do is the Atlantis Submarine ride. Its pretty interesting and it goes down to a couple of ship wrecks. Also the Aloha Stadium bazaar is fun, gives you the chance to find a bunch of souvenirs for your trip. There is also the International Market place in downtown Waikiki, they are also a good place to look for souvenirs.

Sounds like you are bound for Oahu...check out the Polynesisan Luau and theme park - great dancing and beautiful setting and people. It is run by BYU-Hawaii, so it is essentially a mormon missionary money maker. Worse things could happen.
