Yes you need visas for both countries .Its easier to have them before you go , but i have on occasions arranged them in Bangkok . The best way to do it that way is to go to the Khoa San road area in Bangkok where you can organise all your ongoing travel plans for probably the best prices in SE Asia . This is the backpacker area and caters for travellers every need , and visas are easily sorted out from the hundreds of travel agents that are there,

i dont know about cambodia but i have gotten a visa at the airport in viet nam upon arrival, after that you can get visas in viet nam to travel anywhere.. that said, it will be MUCH more convenient to get all that done before you leave home...

I have traveled to Vietnam recently and yes, you need to get a visa prior to traveling to Vietnam. I don't know about getting a visa once you have arrive as it will delay your vacation. I can't say much for Cambodia because I haven't been there. Once you have a visa of Vietnam you can stay there as long as the visa allows you to. From the US side, I know that with a US passport you're allow to stay at another country for as long as you'd like depending on that country's Immigration law. I know that you can stay permanently in Vietnam if you'd like.
