The best way to say goodbye in Vietnamese is "tam biet" or "chao tam biet". It works nicely and politely every time of the day everywhere with everybody old, young, male or female.
Do not use "chao anh" or "chao em" because it will upset a lot of people if you don't use it right (Especially "chao em")

'Tam Biet' is more formal way of addressing and usually used by the northern people ie Hanoi etc. For conversation, normally people would use 'Chao', especially in the South. However, 'Chao' can also be used as 'Hello' too. To say to a female, say ' Chao Em'. To a male, say 'Chao Anh'. You can also say goodbye in this sentence - ' Em/Anh, hen gap lai ' ie 'see you again'....
