I know there are many more then this when I visited a musuem in Hanoi which talked about the different ethnic groups in Vietnam

Officially, there are 54 different nationalities in Vietnam. However, similar to China and Russia, the ethnic minorities live mostly in their tribal areas in the mountainous areas or high plateaus away from the plains and the major population centers.

Exceptions are the Hoa (ethnic Chinese) who live mostly in the cities in the South and the Cham (descendants of the original inhabitants of Champa, a country absorbed by Vietnam) who live in lowland villages in the center and the Mekong Delta.

Most ethnic minorities amount to only a few thousand to a few hundred thousand each, similar to Native American tribes in the US so the vast majority of the people of Vietnam are still the Viet (or Kinh) people. So while there are indeed 54 different ethnic nationalities, just about anyone that you'll meet while visiting Vietnam will be of the Viet (Kinh) ethnicity unless you're in Cholon (Saigon's Chinatown) or a tribal area in the mountainous North or the Central Highland.
