Thai and Phil are great places, personally I prefer Vietnam, the people are fantastic, friendly and helpful, there no threats of any type from terrorists, there is plenty to see and do all over VN and you will never get bored.
The person who mentioned Bali is also correct that is one beautiful island, but tourism is still recovering slowly there. I liked the island near Bali called Lombok. At lot of the locals described it as what Bali was like 20 years ago, virtually untouched by tourism, but is getting better every month.
Anyway I am getting away from the question you asked, depending on what you want out of your holiday, decides on where you should go. Thailand is more advanced than Vietnam as far as tourism goes, but everything you could want is available in Vietnam, including beaches, good hotels, good food, great sights and great fun. There is also a large expat community in Ho Chi Minh & Hanoi with most of the guys based in the cities, so if you meet any of them they all know a great place to go and visit that most tour companies don't take you to.
