There is a brand new Jet Ski operation in Hoi An that offers exploratory adventure tours through the Hoi An delta. River trips to Chu Lai Lagoon, My Son and the Lao border. I don't think anyone else in Asia is doing anything like it. Very cool. Check out this web site.

Take the overnight train from Hanoi to Sappa and then spend a day or two with the multi colored dressed inhabitants who speak their own language, not Vietnamese. Take hikes through the breath taking scenery. Get so close to China you can almost have one foot there and the other in Sappa
