You can get Mobiphone, Vinaphone, Vietel and scores of others, but those are the three biggies.
Denominations vary...but you can get pre-paid sim cards easily. If you're gonna be here for a while, get 200,000 vnd. (NOTE: 17,000 vnd = $1 US dollar)
If you wanna call home more often you're gonna need a bigger amount.
