The Cu Chi tunnels are really only for War aficionados.
When you say "going down" I have to assume you're living in Vietnam already, so enjoy HCMC shopping and nightlife.
The Delta has its good points, but so does shopping your head off too.

You can do the Cu Chi tunnels in half a day from Saigon. The Mekong delta tour would be an entire day. How short a stay are you planning if a day and a half is too long ?
Personally I'd take the beauty of the mekong over crawling around the Cu Chi tunnels. I've done the tunnels and they make you downright claustrophobic
