You should definitely go on Korean Air. When I went with them, I made a stop at Korea and then went to Vietnam, but the stop was only 2 hours. However, when you go from Vietnam to Korea, you can make the stop longer. My trip was the same thing except it was from SF.

The easiest way is to go with Korean Airlines, with a request for a stop-over stay in Seoul on the way back. Some airlines might charge extra for this stop-over, e.g. Eva Airway (Taipei), whereas others might not, e.g. Cathay Pacific for stop-over in Hong Kong.
They will still issue you a "bunch" of tickets though, as you will need a ticket @ each stop either way. It is just if you book this way, all the tickets would be given to you in one package.
The best recommendation though, if cost is a concern, is to check with your travel agent. (S)he will be able to tell you which airlines would offer you the best cost for this route.

Why don't you go to a travel agent? He/She will be able to do it for you... It'll be much easier...
Or like timepass247 said. Buy a ticket on Korean air to Vietnam... and on your way back stop at Korea...
