What all is in pho dac biet?

When I eat pho, I used to get pho bo vien (beef balls) all the time, but my boyfriend always gets dac biet and it is pretty good.

I started getting it now and I can see that it has a few different cuts of meat in it instead of just one type, but what is all the other stuff in there? I think there is tripe (cow stomach?), some sort of globs of fat... Anything else I'm missing?

Now I know, that every restaurant or person's mom/grandma might put different stuff in their pho, so just tell me based on your own personal experiences please.

I am just up late writing a paper and feeling hungry and thinking about pho.

it is just the same , here they just put more meats or even all stuffs in the bowl and to make it become dac biet = special , and u have to pay more for it, some places it is just the same but they might make the bowl bigger , it is just like a way of marketing , like when u go to somewhere and get a VIP one , u feel u different of course u have to pay more , but u feel that and every one will admire u or something, it is just a way of marketing , see, it is just a restaurant and they cook pho for one recipe, they cant split if this one is special , and that one is normal or blah blah blah, it is just the same sauce and such , try to imagine, if u eat a normal and feel it is not good n tell to every one , then it is not a good reputation right?

Those wouldn't be "globs of fat". You're seeing tendon, which is chewy, not anything like fat (unless it's a junky Pho house). Usually they ask you for your choice of "tai", where they put raw lean beef on top, which then quickly gets semi-cooked by the hot broth, or "nam" which is (pre-boiled) brisket. Sometimes they'll put a raw egg in it, which, again, gets cooked by the broth but, after stirring the bowl, gets diffused through the broth.
