Why not try Vung tau, it is only 90 minutes From Ho Chi Minh city has great resorts and the beaches are beautiful.To get a better idea of it look at google earth.

Nha Trang is beautiful. The water is very very clear and clean. you should stay at Ana Mandara. Very good hotel. Da Nang also has very beautiful beaches.

Every time I returned to Vietnam, I always traveled to Mui Ne, which is 180 km from Ho Chi Minh City. You can check out the accommodation options from the website here: http://www.muinebeach.net/

The beach is spectacular, and the resort area is very secure. Travel from Ho Chi Minh City to Mui Ne is very simple, you can travel by bus (ticket costs about 6 to 8 dollars) or by train. The trip takes 3-4 hours. If you stay at Mui Ne, try to book a beach front bungalow, you won't be disappointed. I've paid 130 dollars/night for a private beach front bungalow at Bamboo Village Resort which is fabulous. Vietnam is one of the very few places that is still affordable.
