Something i would recommend is known in Vietnam as Banh Xeo. Its a very well known meal with the locals and has an amazing taste that the foreigners will love ( Well at least i do!)

The easiest one would be spring rolls. After you rolled them, cut them in an inch long, add green herbs and stack them however you like it. Enjoy
During my time in Vietnam I was only exposed to one Vietnamese "dish." We (the Americans advisers assigned to the unit) called it "Vietnamese stew." It was rice, boiled cabbage, and whatever "mystery meat" was tossed in the pot.
