Everyone raves about Dalat - I haven't been there, so can't comment.
Sapa is really nice, and there are several resort-style accommodations there.
I stayed at a resort in Bac Ma National Park, just outside of Hue. It was really nice, hiking trails, dense forests. Very pleasant - my Vietnamese colleagues found it a bit quiet for their tastes though I think.
