I'm going travelling in SE Asia from the end of May, Vietnam is first, what are the must do's/see's?

If I were you, I would go to Hanoi and stay in the backpackers place in the Old Quarter. I'll dig out the details for you and e-mail them. From there you can book trips to all kinds of places.

There is a friendly Aussie there who will be able to advise you which places to go first and help you plan your stay

Hanoi will blow your mind. It's a real assault on the senses. The Vietnamese are the coolest people on the planet - they work so hard yet never break a sweat. Watching them go about on their mopeds is an experience in itself. Visiting the war museum will really choke you up.

An overnight boat trip on Halong Bay and a overnight train trip to Sapa (amazing place up in the mountains) are a must.

You will love it and won't want to leave the place once you are there.

Here are some best attractions of Vietnam :
1. Ha Noi : capital city with old towns, museums and imperial architecture. A very busy city in Northern Vietnam, but less crowded and active than Sài Gòn. Best known are : Ba Äình Square, Hồ Chí Minh Mausoleum and Museum, "36 old roads", "Hồ Gươm" (Sword Lake or Hoàn Kiếm Lake) and several museums.
2. Sapa and Mount Fansipan: lies at the north of Hoàng Liên Sơn Mountains. Sapa is a very small town covered in fog almost the year. The climate is very cold with snow in winter. Fansipan is suitable for trekking tours. It's also the highest point in Indochina (3,143 m).
3. Ha Long Bay : world natural heritage, a bay with thousands of islets and islands. Tourists may go here for boating on the bay and visiting caves.
4. Huế : former capital town. Visit the Imperial Palace (Forbidden City), mausoleums of Nguyen Kings and old pagodas. Huế "nhã nhạc" (court music) is also worth to listen.
5. Hội An : a former trade port in middle Vietnam. Known for ancient houses and roads and beautiful beaches and resorts. People may get a bus to Mỹ Sơn (a former Cham Holy City), Da Nang City (biggest city in central VN with many beaches).
6. Nha Trang : known for beautiful beaches, sea diving, sea bay tours and exploring islands. Undersea marriages have been provided recently.
7. Mui Ne : a cape that lies 10 km east of Phan Thiết City. Known for best tourist resorts.
8. Ho Chi Minh City (aka Sài Gòn), financial and economic center of Việt Nam. Come here to visit a green center and busy roads on town. Best known here Bến Thành Market, Hall of Reunification, Củ Chi Tunnel, War Remnants Museum.
9. Äà Lạt : old French resort in the southern part of Central Highlands. Today is the most famous tourist site in the South. Come here to enjoy the European climate, see flowers, explore waterfalls and scenic lakes.
10. Mekong River Delta : covered with a huge system of rivers and man-made channels built since 18th century. Come here to enjoy fresh fruits, boating through water forests and shopping at floating market. Cần Thơ is the biggest city in the region.
11. Vietnamese food : very delicious and easy to eat. Spices and material for the same food may vary among regions. Best known are : phở (a kind of noodle with soup), types of bún, Vietnamese family meal with rice. You can find all of these around Bến Thành Market at night.
12. Beaches : stretch along the coast of Vietnam, from Ha Long to Hà Tiên. Almost all central towns and cities have beautiful beaches.

Been to VN 2 years ago stayed in Saigon ( be very careful crossing the road ) then took a trip across the delta up to Cambodia Next time I'd go North/South and take in Hanoi and Hue

You can visit Halong-bay, sapa, love market, night market ( this is trandition of Hanoi people) Perfume pagoda, Hoalu-tamcoc....and more.

Buy maps, guider books (sold in the airport, post office) then choose the suitable tourist-style with your habit (mountain, beach, or culture...)

maps, guiders how to go to that areas. alot of beach, island, mountain, etc...
I do not know your style, so the above answer is good for you if your trip would be free, open tour.

Definetly try something ethnic, food and dancing and beer do something wild. I am sure there will be lots of places of interest when you get there.
