Depends really on why you want to go.
I personally prefer The Mekong Delta (Can Tho) as it is more akin to the typical image you have of Vietnam - ie people in pointy hats, paddy fields and boats. It is very picturesque - the one thing I would say however is that you really need to go on an organised tour there as exploring under your own steam is difficult as you really need to have a local guide with you that can take you to the interesting places.
Dalat on the other hand, is imho, far less interesting although you can easily get around and explore yourself. It's a great place to go elephant riding or stay with a traditional hill tribe family. It also has the added benefit of being in the hills so is much cooler (a very valid point at certain times of the year when the delta area is steaming hot and very wet (May - Aug). |

they are totally different places, can tho is in the mekong delta and da lat is in the mountains, so it all depends what you're after.
i like both places, but have spent more time in can tho. it has a special life about it and has become a very progressive place since the new roads and bridges have been built. it's nice and warm here, with a good amount of constant activity, and unlimited fish.
da lat has THE best and freshest vegetables i've ever had and great range of scenery. it's in the mountains so is always cooler than the lowlands. it's also the most visited place by newly weds so it is set up for honeymooners and romantic retreats.
if you have the time why not visit both and then you can go to the one you like more. that said Vn has so many interesting places to visit that you could spend many years in the place and still not see it all (but i've tried).
