Vietnamese Dong (VND) is the best.
Second best is US Dollars.
Euro and Pound Sterling can only be exchanged at recognised exchange bureaus and you won't find many in the provinces. You'll need to be in the cities for that.
Also, Pound Sterling is more difficult to change than the Euro. |

The US dollar, preferably crisp clean bills, is widely accepted among major shops and restaurants. Travellers checks can be cashed at authorised foreign exchange outlets and banks, and always require presentation of passport. There is normally a 2 to 5 percent transaction fee for cashing travellers’ checks. Visa and Mastercard are accepted in some of the bigger hotels and restaurants.
There are also a small number of international banks now operating in both Hanoi and Ho Chi Minh city. There are now many 24-hour ATM machines now all over Vietnam. The ANZ machines work with all cards. |

My inclination would be to bring US$, but also your ATM card. I lived in Ha Noi for 4 years (on the latest visit) and don't recall changing cash during that time; I used the ATM. There was a problem when in smaller towns though, there were ATMs but they required 5 digit pins, and mine is 4 digit.
In an earlier visit I changed cash at jewelry shops, banks are an option also.
If you bring cash, bring crisp, clean bills.
You can pay bills in US$ in expensive restaurants and shops, but don't try to fool yourself into believing that the exchange rate is exactly what you would get at the bank or ATM. |

US dollars are accepted by most businesses and even most taxi drivers and street vendors will accept dollars which is not the case with pound sterling or euros. It's not really necessary to change pounds or euros into dollars, you can change to Dong instead, which is accepted everywhere. You can change euros or pounds at any bank or currency exchange, many jewelry stores/gold shops often offer the best exchange rate. |

US dollars are the best currency to use for the whole region. Almost everywhere you go will take them and in some cases the exchange rates are pretty good. |

The British pound, as there are ATM's in most cities, and you can change to Vietnamese Dong without any problems.
